Black tea is crafted through a fully oxidized process, in which temperature plays a critical role in determining the quality and extent of oxidation after the tea leaves are rolled. This is why many of the world’s renowned black tea regions are located in tropical climates.
During Taiwan's hot summer months, the high temperatures naturally create ideal conditions for producing premium black tea. The heat not only encourages the tea plant to generate higher levels of polyphenols—which can otherwise taste astringent—but also supports the full oxidation process that transforms these polyphenols into theaflavins and thearubigins. These compounds give the tea its signature reddish-orange hue, reduce bitterness, and add a smoother, rounder body to the brew.
The result is a rich and elegant black tea with a soft floral aroma—reminiscent of jasmine—and a delicately sweet, well-balanced flavor.
